Forbidden rice pudding

Like the forbidden fruit of the dessert world, except its made of rice. Who would have thought that a humble grain could be so scandalous? But dont be fooled by its rebellious reputation; its still just rice, albeit black and sticky. So, go ahead and indulge in this forbidden pleasure, if you dare. Just dont expect any wild and wicked adventures, unless you count an extra spoonful of sweetness as a thrilling escapade
Black rice
washed, soaked overnight

Bring the water to boil and add the rice. Gently simmer for

30 minutes
without any lid.

Once the rice is cooked through, stir in sugar, salt, kaffir lime zest and coconut milk.

Let it cool to room temperature and refridgerate for atleast

Prepare the garnishes while the rice cools.

Spread the coconut flakes onto a thin even layer on a rimmed baking tray and toast at 300F until golden.

Wash, peel and slice fruits into ¼ inch cubes.
